Pumpkin Creme Brown Rice Spaghetti with Crispy Onions

2017 is coming to an end soon! I hope most of you had accomplished most of your to do list for 2017. I wish my post today are able to encourage you to cook more healthy food at home for your loved one. I really love the bonding time during our meals.

Thanks for San Remo and Singapore Home cooks again for this healthy hampers. I love San Remo's 100% organic brown rice spaghetti which is free of dairy products, egg & yeast. Don't worry about having the impression that this Brown rice pasta's texture is hard and try after cook. Trust me, it taste awesome! 

Let go meatless to end our 2017. These earthy pumpkin puree & sun dried tomatoes paste with cream create a prefect spaghetti sauce. I pan-fried the red onions with olive oil till crispy and served it together with the spaghetti.  This quick, easy & healthy dish is very aromatics & yummy!

Pumpkin Creme Brown Rice Spaghetti with Crispy Onions
(Serve 3 pax)

  • 250g San Remo Brown Rice Spaghetti
  • 6 tablespoon olive oil
  • 1 cup thin slliced red onions
  • 1 clove minced garlic
  • 8 tablespoon Pumpkin puree
  • 1.5 tablespoon San Remo Sun-dried tomatoes & Garlic sauce
  • 1 teaspoon dried parsley flakes
  • 1 teaspoon dried chilli flakes, optional 
  • 120 ml of pasta water
  • 6 tablespoon cream
  • salt to taste
  • Some fresh parsley for garnish 

  1. Cook the spaghetti in salted water according to the package direction. Drain the spaghetti and reserve the pasta water for the sauce later.
  2. Heat a skillet, add in olive oil and red onions. Sprinkle some salt on the onions and cook it over medium high heat till it brown and crispy. Do not let the onions burnt. Scoop out the crispy brown onions on a plate for later use. 
  3. Use the same skillet, add in the garlic, dried chilli flakes, dried parsley flakes, sun-dried tomatoes & garlic sauce, pumpkin puree and give a good stir. Add in the pasta water and bring the sauce to boil. Do adjust your the volume of the pasta water to get the consistency you preferred. Once the sauce is boiling, lower down the fire and add in creme and mix well. Add in salt to taste. 
  4. Lastly, add in the cooked spaghetti and toss it well with the sauce. Serve it on plate. Add the crispy onions on the spaghetti and garnish with some fresh parsley. It's ready to serve!
Side note:
How to make pumpkin puree: Use fresh pumpkin. Remove skin and cut into cubes. Steam it for 20 mins and blend it well with a blender.

Casa Rinaldi Mystery Box Challenge & a giveaway

Jingle bell, jingle bell, jingle all the way...Count down 7 days to Christmas!

Ding Dong! Yippee, I have received a mystery box from Casa Rinaldi. I love to receive presents like everyone here.. In the mystery box, it contained Casa Rinaldi Bay Leaves, Casa Rinaldi Dried Tomatoes In Vegetable Oil, Casa Rinaldi Extra Virgin Olive Oil 100% Italian In Spray Bottle, Casa Rinaldi gnocchi, Casa Rinaldi Black Balsamic Pearls (Perla Nerla) & a $20 Supermarket vouchers to purchase ingredients needed for the cook off. The challenge given is to use all the items received to whip out a meal. :) I am ready for the game! 
I am going to prepare a Christmas lunch for my hubby. I hope this post can give u some ideas for the upcoming Christmas treat preparation too! 
Among the ingredients received, I love the Casa Rinaldi Black Balsamic Pearls (Perla Nerla) the most! My first time using & fall in love with it. We love the pearls bursting in every bites when eating. It’s so refreshing & tasty. It’s great for garnish & add flavor to the dish too! 

Egg & Cheese salad served with sun dried tomatoes & balsamic vinegar pearls
(Serves for 2 pax)

  • 1 head Romaine Lettuce
  • Some cream cheese wedges 
  • 1 hard boil egg
  • Balsamic vinegar pearls 
  • 2 slices sun dried tomatoes
  • Some salt & pepper to taste
  • Extra virgin olive oil 

  1. Plate the lettuce first. Assemble the eggs, cream cheese, sun dried tomatoes & top with some balsamic vinegar pearls. Lastly, spray some extra virgin olive oil, salt and pepper before serve. 

Bay leaves stew chicken served with Gnocchi
(Serves for 2 pax)

  • 3 chicken thighs 
  • 10pcs bay leaves 
  • 1 tablespoon dried parsley flakes
  • 6 cloves garlic
  • 3 slices sun dried tomatoes 
  • 400ml chicken broth 
  • Some Salt & black pepper
  • Some Extra virgin olive oil 

Prepare the Gnocchi
  • 300g gnocchi
- Boil water in a pot. Add in some salt & oil. Add in the gnocchi when water is boiling. Cook for 5mins. Drained it & set aside for later use. 

  • Balsamic vinegar balls 
  • Dried parsley flakes 
  1. Washed and dry the chicken thighs with kitchen towels. 
  2. Marinate it with some salt, black pepper & extra virgin olive oil. 
  3. Heat up the skillet. I spray some extra virgin olive oil on the pan. Pan fried the both side of the chicken thighs for 5 mins each. 
  4. Transfer the chicken thighs on a baking dish or cast iron pot. Add in the chicken broth, sun dried tomatoes, bay leaves, garlics, dried parsley. Give it a quick mix and send the dish to oven to baking for 30 mins at 170C. 
  5. Plate the cooked Gnocchi on a plate, Lay a pcs of nicely baked chicken thigh, add the sauce on top of the chicken & gnocchi & garnish with some dried parsley & balsamic vinegar pearls. It’s ready to serve!

Bananas & Blueberries Pancakes

What will u do when u have over ripen banana? Of course, I will use it for my bakes or smoothies! Over ripen bananas are full of flavor, easier to digest & higher levels of antioxidants. 

Blueberries season is here again too, big fat blueberries are easily available in supermarket now at reasonable price. I am going to add into the recipe i am going to share today!

This pancake recipe is super easy to follow and taste super yummy. The blueberries are bursting all over when u enjoy the pancakes. :)
Bananas & Blueberries Pancakes
(Make 10 regular size)
  • 150g All purpose Flour
  • 200ml milk 
  • 30g honey
  • 1 large egg
  • 6g baking powder 
  • 2 medium size ripen bananas, mashed
  • 125g blueberries, washed & tap dry
A little oil for your skillet/pan

  1. Put everything together in a baking bowl except mashed bananas & blueberries.
  2. Mix well till batter is smooth.
  3. Add in the mash bananas and mix well.
  4. Add in the blueberries and mix well then put aside for it to set for 10 mins. 
  5. Heat up a skillet with some oil 
  6. Make sure your skillet is hot, add in a scoop of pancake mixture. 
  7. Once you see bubbles, flip the pancake. Let it cook for another 1 min & it is done. Continue the steps till you finish all the pancake mixture.
Pancake batter. :)
Note: If you don't have/do not love blueberries, you can omit it and turn this recipe to Banana pancake too. :)

Sweet & Spicy Seafood Rice with Prima Taste

There are many brands of premix sauce selling in the market nowadays. These premix sauce aids cooking more easier and quicker at home. Due to people are more health conscious, we would prefer those premix with no MSG and chemical.

I am taking part of the recent contest organised by Singapore Home Cooks & Prima Taste. Here is my submission. Nothing fancy but this pot of rice is spicy sweet & full of seafood flavor! This sauce is mild spicy and my kids can accept it too! I do not need to blend all the chilli & spices to make this pot of rice. All I need is 1 pack of PRIMA TASTE Sweet & Spicy Seafood sauce. Hee hee! 

Sweet & Spicy Seafood Rice with Prima Taste
Serve 4 pax

  • 2 cups of rice
  • 2 cups of water (1:1 ratio)
  • 300g shrimps
  • 3pcs medium squid
  • 100g hotdog
  • 1 cup of mushroom (I used Portobello Mushroom)
  • 1 onion
  • 2 cloves garlic
  • 3 tablespoon oil
  • Some chinese parsley
  • 1 pack PRIMA TASTE Sweet & Spicy Seafood Sauce 
  • 1 tablespoon light soy sauce

  1. Marinate the seafood with PRIMA TASTE Sweet & Spicy Seafood Sauce & 1 tablespoon of light soy sauce & Chinese Parsley.
  2. Heat the oil in pot, sauteed the onions & garlic till fragrance.
  3. Stir fry the mushrooms for few mins. Add in the marinated seafood with sauce & hotdog and stir fry well.
  4. Add in the washed and drained rice and stir fry well.
  5. Add in the water and let it simmer cook for 20 mins or well cooked. If you are using rice cooker, follow your rice cooker cooking time. Different pot/electric appliance varies, please use your normal cooking time to gauge.

Sugar Cinnamon Gnocchi

Today, I am going to share with you a very simple, quick snack for kids using Gnocchi by Casa Rinaldi. No one will reject this tiny crispy churros taste alike snack coated with sugar and cinnamon. It's just taste simply awesome & addictive. Don't say I didn't warn u. Let starts!

Sugar Cinnamon Gnocchi
(Serve 2 pax)
  • 300g Gnocchi
  • 100g fine sugar
  • 10g Cinnamon powder 
  • Oil for deep frying

  1. Mix the sugar and cinnamon powder together on a plate.
  2. Heat the oil in a small pot.
  3. Add in Gnocchi and deep frying it till golden brown.
  4. Scoop out the golden brown Gnocchi and place it on kitchen towel to drain off the excess oil.
  5. While the Gnocchi is still warm, transfer it to the sugar cinnamon mix and give it a good coating. Alternative, place the sugar cinnamon mix & Gnocchi in a plastics bag and SHAKE well. Serve it warm! yum~~~

Some product info about Gnocchi 
Gnocchi (NYOH-kee, NOH-kee), are plump little lumps of pasta made mostly of potato. The gnocchi is eaten as a form of pasta dish in Italy. The gnoochi are cooked in salted boiling water and is considered cooked when they floats to the surface. The Italians usually eat it with pasta sauce as part of their staple dish. Some of them panfry this and coat with cheese.

Cheesy Korean Gnocchi

This is the first time I used this Gnocchi in my kitchen. I am glad that I am given a chance by Casa Rinaldi & Singapore Home Cooks to try out this product. Do u know what is Gnocchi? Gnocchi is small dumplings made from potato, flour and usually serve with a sauce. It is widely use in Italian cooking. You can make your own Gnocchi at home but for busy working mummy like me, these convenient pack of Gnocchi come to my savior. Instead of using these Gnocchi it in the traditional Italian way, I will like to use use it to whip out a Korean's dish.

Every Gnocchi is coating with the spicy chilli paste and oozing cheese. To my surprise, my hubby & kids give thumb up for it. This dish goes very well with a glass of BEER! Say CHEESE & CHEERS to it!

Cheesy Korean Gnocchi
Recipe by TAGlicious
(Serve 4 pax)
  • 500g Gnocchi
  • 300g Chicken breast (seasoned with some salt, black pepper, sesame oil & corn flour)\
  • 1/2 yellow onions, wedged 
  • 1/2 cup Kimchi, cut into small pcs
  • Some spring onions
  • 1 cup mozzarella cheese
  • 1 portion of Korean chilli paste mix ( refer below for recipe)
  • Oil
Korean Chilli paste mix 
  • 2 tablespoon Korean chilli flakes
  • 2 tablespoon fish sauce
  • 1 tablespoon Korean chilli paste
  • 3 cloves minced garlic
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  1. Pan fried the Gnocchi in a skillet with oil till the surface of the Gnocchi is slightly brown. Scoop it out and set aside for later use. (This is to prevent it to be soggy in this dish)
  2. On the same skillet, add in a little more oil and stir fry the onions till brown and soft.
  3. Add in chicken and stir fry till with the onion for 5 mins.
  4. Add in the Gnocchi, kimchi & korean chilli paste mix & spring onions into the skillet and mix all well.
  5. Top the mozzarella cheese on the dish and bake it for 15 mins at 170 degree or till the cheese is golden brown. Serve it hot!
Look at every Gnocchi is coated with the Korean chilli paste....Yummy Chewy~~~~

Salmon with Lime Coconut Lemongrass sauce

Lime Coconut Lemongrass sauce
(Serve 3-4 pax)
  • 200ml AYAM coconut milk
  • 1 shallot, sliced
  • 1 tablespoon coconut oil (you can use any vegetable oil)
  • 1 lime zest
  • 1 tablespoon lime juice
  • 1 stalk of lemongrass, smashed
  • 1 chilli padi, optional if u don't take spicy
  • 2 teaspoons sugar
  • 1 tablespoon fish sauce, to taste
  • 5 basil leaves, sliced 
  1. In a small sauce pan, heat up the coconut oil and sauteed the shallots till fragrance.
  2. Add in the coconut milk, smashed lemongrass, lime zest and simmer at low fire for 5 mins. Keep stirring the sauce to avoid burn.
  3. Add in fish sauce and lime juice to taste. (Adjust to your taste preferred)
  4. Add in chilli and off fire. Set the sauce aside while u pan fried the salmon. Refreshing, slightly spicy coconut sauce serve the sauce on rice & salmon. Add sliced basil leaves on the rice & salmon before pouring the sauce on it. 

Coconut Lemongrass sauce served well with any meats! Give it a try and enjoy!

Yummlicious Marmite Clam Pasta

Love or Hate Marmite? One may feel that Marmite just taste or smell horrible but ones may just simply love it. Marmite gave a umami flavor. People that love these flavors will agree with me that Marmite is yummy and will get hooked on it. It's always hard to please everyone. Personally, we love Marmite very much! My kids never fail to praise my kitchen smelling so heavenly when cooking meal with it.

I had shared the goodness of this little bottle of Marmite earlier on HERE. I am going to share with you another simple recipe that u can simply have your meal in 30 mins. Trust me the sweetness from the clam & salty unique taste from Marmite makes the dish taste AWESOME. Who will say NO to this Marmite Clam Pasta?

Marmite Clam Pasta
Recipe by Taglicious
(Serve 4 pax)

  • 500g Clams (I used flower clams)
  • 300g Spaghetti (Cooked in water with Salt & oil)
  • 2 tablespoon Olive oil
  • 3 cloves garlic 
  • Chopped Coriander
  • 1.5 tablespoon Marmite
  • Black pepper, to taste
  • Some pasta leftover water

  1. Heat up a skillet. Add in oil & garlic and sauteed it till fragrance.
  2. Add in the clams and cover the skillet to let it cook for 2 mins.
  3. Add in the cooked pasta, Marmite, chopped coriander & mix everything together.
  4. Add in the pasta water slowly and mix well till u get the consistency u want for this dish.
  5. Last, sprinkle black pepper and the dish is ready to serve. Enjoy!

Marmite Mushroom Rice [Vegan]

Those readers that have been following me should know my cooking style by now. I always go for simple, quick and easy recipe meal. Today I want to go for a meatless meal. I did a ransack in my kitchen, I found some mushrooms so I decide to cook a pot of rice to fill up the hungry tummies.

In order to make it healthier, I used Marmite as one of my seasoning to this dish. Do not underestimate this small bottle of wonder. Marmite is made of a few simple ingredients: yeast extract, salt, vegetable extract, spices and vitamins (B1, B2, B3, B9, B12). Marmite is gluten free and high in vitamins. It is suitable for vegetarian and low in calories. Oh my, Marmite is a must have condiment in my kitchen. 

When the pot of rice is cooking, the aroma from pot just smells so good. My kids keep asking what am I cooking and when their meal is ready. Haha!
Marmite Mushroom Rice [Vegan]
Recipe by Taglicious
(Serve for 4 pax)

  • 1.5 cups of rice
  • 300ml water
  • 100g Swiss brown mushrooms
  • 100g Portobello mushrooms
  • 150g King Oyster mushroom
  • 2 tablespoon Extra virgin coconut oil
  • 1 tablespoon Marmite
  • Some Coriander
  • 3 cloves Garlic
  • Black pepper, to taste
  • Spring onions, for garnish
  1. Wash and drain the rice. Set aside for later use. 
  2. Slice the mushrooms into desired size (Do not washed the mushroom with water, use a damp cloth to clean it instead) & minced the garlic & coriander. Set aside.
  3. Heat up a pot. Add in coconut oil and garlic. Sauteed it till garlic is brown.
  4. Add in all the mushrooms and keep stirring till it soft.
  5. Add in rice.
  6. Add in the marmite, chopped coriander, black pepper and mix everything well.
  7. Add in water and mix well. Cover the pot with a lid and let it cook for 15 mins. After 15 mins, off fire and let the rice to steam in the pot for another 10 mins.
  8. Before serve, add in chopped spring onions. 

1) You may use your electric rice cooker for this dish. Follow steps 1-6 then transfer everything to your rice cooker and add in water mix well and let your electric rice cooker to do wonder for u.

Fish Head Soup [Full of collagen]

Fish head soup for my kids! A good booster for kids during exam period as well as milk booster for breast feeding mummies. It's easy to make it at home. Just 1 whole fresh fish head to do the magic. I asked the fishmonger to chop into big chunks so that I don't need to handle the fishy smell. You can prepare before hand and store in fridge(Keep up to 1 week)/freezer (Keep up to 3 months) for later use. This soup also another source for collagen. Just drink more to look young and pretty too!
Fish Head Soup [Full of collagen]

  • 1 big fish head, appromix 1kg (I used red snapper)
  • 2 Litres water
  • A few slices ginger
  • A stalk Chinese Parsley (Known as Coriander), optional 
  • 2 tablespoon of oil (To pan fried the fish head)
  1. Wash and tap dry the fish head chunks with kitchen towel. 
  2. Used some oil to pan fried the fish chunks till golden brown for both sides.
  3. Transfer to a big pot and fill up with water, slices of gingers & Chinese parsley.
  4. Bring it to boil and lower down the fire. Continue to let it boil for 2 hours.
  5. Add salt to taste (Optional) 

This is how it looks like after fridge, jello alike fish stock. :) Heat it before serve too!

  • I used a cast iron pot, it only took me 50 mins to achieve this milky soup.
  • The fish head you may discard or consume (It's rather tasteless).
  • For storing, Sieve the soup to prevent any small bones in the soup.

Nourish & Beauty Mushroom, White Fungus & Chicken Soup with Huiji Waist Tonic

For busy adults like us, we need to intake some tonic to keep our body healthy. Instead of buy, store & brew different kinds of herbs, what I need is to have a bottle of Huiji Waist Tonic at home. Mushroom, White Fungus & Chicken Soup with Huiji Waist Tonic
(Recipe by TAGlicious & serving for 4 pax)

  • 1 kampong chicken, about 1-1.2kg
  • 12pcs dried shiitake mushroom, soaked
  • 1 pcs of white fungus, soaked
  • 5 big red dates
  • 1 litres water (I used my own collagen soup)
  • 50ml Huiji Waist Tonic
  • Salt to taste

  1. Add everything into a pot except Huiji Waist Tonic & Salt and bring it to boil for 60mins.
  2. Before serving, add in Huiji Waist Tonic & salt to taste.
  3. Serve warm.
