Garlic Balsamic Vinegar & Olive oil salad dressing

Recently, I took up the challenge by Alce Nero & Singapore Home Cooks to whip out delicious and nutritious meal within 30 mins using their products. Friends who know me, they know that I am a salad person. Today I am going to share with you a simple salad dressing using balsamic vinegar & olive oil. I love the aromatics, sweet fruity taste of this Balsamic vinegar & the smooth olive oil by Alce Nero. It adds good nutritious value to my meal & they are chemical, preservative & pesticide free! Do you want to reduce your overall fat & calorie intake from the normal salad dressing? Try this, I am sure u will love it too.

Oh yes, my 5 years old boy had a big serving and he gave me a good thumb up. I am delighted to find a new way to coax my boy to eat more green. 
In my salad bowl, I have lettuce, cherry tomatoes, eggs, yellow onions, grilled chicken breast
(Just marinate with salt and pepper & pan fried for 15 mins till cook) & fresh strawberries!

All done in 20 mins time!
Pour in the Garlic Balsamic Vinegar & Olive oil salad dressing...Yummy~
Toss it well before serve!

Garlic Balsamic Vinegar & Olive oil salad dressing
(Serving for 2 persons)

Ingredients need: 
  • 0.5 teaspoon fresh garlic, minced
  • 0.5 teaspoon brown sugar
  • 0.25 teaspoon salt
  • 2 tablespoon Alce Nero Organic Balsamic vinegar
  • 1.5 tablespoon Alce Nero Organic Extra vigin olive oil
Steps:

  1. Add all items together in a small bowl, whisk well and serve on salad prepared.

Note:
  • Different Balsamic vinegar taste may varies. Good Balsamic do not need a lot of sugar in the dressing. You may adjust the it to your liking.

Honey Orange Popsicle

We are disturbed by the horrible bad air recently. This remind me to appreciate things around us and do not take thing for granted. During the hazy day, do stay indoor and loads ourselves with lots of water, fruits & vegetable! We are happy today as the haze is better and we can go outdoor for fun. I decided to let my boy to make some refresh, simple yet loads of goodness. I add in honey as honey is good for our body & it is natural sweetener. Honey is anti-cancer & Immunity system builder too. Let make some this cold treat today!

Honey Orange Popsicle
Ingredients
  • Oranges & Lemons
  • Honey (I used Alce Nero Organic Wildflower Honey)
  • Ice cream mould


Steps:
Squeeze some fresh Orange & lemons juice
Add in honey & mix well! Look at the thick & creamy organic wildflowers honey by Alce Nero.
Pour into the ice cream mould
Pop in the ice-crea stick & freeze!

Traditional MoonCakes

Hop, Hop, Hop! This is not the first year making traditional mooncake for festival. I have been making mooncake for my family for 3 years already. Every year, I will get my Mooncake paste from KCT. They sold variety pastes and I would recommend u to get the paste from them to make delicious mooncake for your loved one. They do sell other ingredients that aid your moon cake making. It is not hard to make moon cake after all. Do try to make some for next year Mooncake festival and enjoy your bakes with your loved one with a pot of nice tea.

Traditional Mooncake
(Make 4pcs of 150g each)
Recipe from GSS

Ingredients needed

Mooncake crust
  • 120g TOP flour/Cake flour/Hong Kong Flour
  • 70g golden syrup
  • 30g peanut oil (I used rice bran oil)
  • 4g alkaline water (also called as Lye water)

Filling
  • 4 salted egg yolk, steamed
  • 440g lotus paste (You can choose your preferred paste)
  • 40g of melon seeds (Optional)

Egg wash
  • 1 egg yolk + 1 tablespoon of milk + a few drop of cooking oil, mix well and sift.
Portion per 150g mold (Do adjust as per your moon cake mold)
  • 110g Lotus paste (Without Melon seeds)
  • 120g Lotus paste (With Melon seeds)
  • 60g moon cake crust

Steps for making the crust:
  1. In a mixing bowl, add in the golden syrup, peanut oil & alkaline water and whisk/mix well.
  2. In another mixing bowl, add in the flour and create a well in the middle.
  3. Add in the wet mixture to the flour. Mix & Knead everything together until it is well combined. I used my Kmix for the mixing. You can use a spatula to do the kneading and mixing too.
  4. Let the dough rest overnight in the fridge so that u will get a nice imprint.

Steps for making the mooncake:
  1. Steam the salted eggs and let it cool down completely.
  2. Mix the melon seeds with the lotus paste.
  3. Weigh 120g lotus paste (with melon seeds) and make a hole in the middle to wrap the salted egg. Wrap it up and form a ball. Repeat the same until you finish your paste & egg yolks.
  4. Weigh 60g crust and flatten it round. Place a lotus paste ball in the middle and wrap it up to form a ball.
  5. Lightly dust your mold and place the mooncake ball into it. Press it hard to firm the imprint. Remove the mooncake from the mold slowly.
  6. Place the mooncake on the baking tray. Repeat the steps for the rest.


Baking the mooncake:
  1. Preheat the oven at 180C.
  2. Bake the mooncakes for 10mins.
  3. Remove the mooncakes from the oven and let it rest for 5mins.
  4. Apply the egg wash with a paint brush. Do not apply a lot of egg wash at one go, remember to do it slowly with patience if you want a nice moon cake.
  5. Bake the mooncake with egg wash for another 15mins or till the color of the mooncake u want.
  6. Let the mooncakes cool down completely and serve it after 3 days. Mooncake skin taste better after it is soften after days.

Chocolate Kawaii Bear Buns

Cute things never fail to attract me. I saw this cute bear buns from Nasi Lemak Lover blog and I told myself that I want to try to make some one day! Found one good morning, with no lazy bugs crawling on me. Yes, the result of these buns really good. It is cute and yummy. The buns tasted as good after 2nd day. Do you want to impress your kids, friends or loved one? Try making some now. Oh ya, I used my new RED kmix to knead the dough, a sponsored gift from my best buddy mummy to celebrate my house warming. Simply love my new toy, Thanks, Mummy Emilie!

Chocolate Kawaii Bear Buns
Recipe from Nasi Lemark lover

Ingredients:
  • 350g bread flour
  • 40g caster sugar
  • 15g unsweetened cocoa powder
  • 0.5 teaspoon salt
  • 1 teaspoon instant yeast
  • 230ml fresh milk
  • 25g unsalted butter, soften
Decorate the Beary Buns
  • Chocolate chips, melted 
  • White chocolate chips, melted
Filling
  • Nutella or Cream cheese
Steps
  1. Knead the dough till elastics, you can use a bread maker/stand mixer/ hands.
  2. Proof the dough for 1 hr or till it doubled it size.
  3. Pouch out the air from the dough. Divide the bread dough into 16pcs, each weigh about 35g (For Bear face) & 32pcs, each weigh about 2g(For Bear ears). 
  4. Use the 35g dough, flatten it, fill up with a small scoop of nutella/cream cheese and wrap it into a ball. Lay them on a square baking pan (9 inches x 9 inches). Repeat the same till u use up the 35g dough.
  5. Use some milk and brush it on the 2g dough. Paste the 2g dough on the face lightly. Repeat the same until finish pasting all the ears. 
  6. Let it rest for another 30-45 mins or till it doubled it size,
  7. Bake the bread in a pre-heated oven for 20 mins under 180C.
  8. Let the bread cool down before final touch up for the bears eyes & mouths.
  9. Melt the white & dark chocolate chips separately. Use a paintbrush to draw the white portion with white chocolate & draw the eyes & mouth portion using a pipping bag. 
  10. It's ready to serve.

Tomatoes Salmon

Salmon is one of my favorite ingredient in my kitchen. You can always find salmon stored in my freezer. Heehee! I always cook my salmon with DIY Teriyaki sauce. Though my kids & hubby do not complain, I do feel bad for preparing the same dish over and over again. Tonight, I come out with something different. Instead of my old way of handling salmon, I cook it in tomatoes sauce. Trust me, the thick, sweet & sour sauce pair well with a bowl of white rice. My loved one enjoyed their dinner and I will cook this dish again definitely.



Tomatoes Salmon
Recipe by TAGlicious

Ingredient needed:

  • 500 g salmon, cubed
  • 2 tablespoon of olive oil
  • ½ yellow onions, diced
  • 2 cloves garlic, minced
  • 4 tomatoes, diced
  • 4 tablespoon tomatoes sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon sugar
  • 50 ml water (You can add more if u want more gravy)
  • Some cherry tomatoes, halves

  • Spring onions for garnish (Optional)

Steps:
  1. Heat up a pan with oil. Sauteed the garlic & onions till soft.
  2. Add in diced tomatoes and stir fry it till soften, about 5 mins.
  3. Add in tomatoes sauce.
  4. Add in  Worcestershire sauce.
  5. Add in sugar and give a good stir.
  6. Add in water and stir well.
  7. Wait till the sauce boils/bubbles, add in salmon cubes & cherry tomatoes. Stir fry well to let the salmon cover with sauce.
  8. Shut lid and simmer under low fire for 10 mins and it is ready to serve. You can add spring onions for garnish.

My Princess is 8!

A simple cake for my Princess's 8th Birthday! 

I am not a professional cake baker. This cake may not be the best looking cake but I am sure it is full of my love to my gal. A little sweet baby she is and I am sure she will continue to be herself and stay happy always.
